Muta Roast (Egg Roast)
This is a very popular dish in Kerala and it is normally had with either Appams, Iddiappams or Pathiris.
Ingredients

4 | Eggs | Hard Boiled and Shelled |
3 | Coconut Oil | Tablespoons |
6 | Green Chilies | Slit Lengthwise |
3 cm | Ginger | Peeled and finely chopped |
20 | Curry Leaves | Washed and Dried |
3 | Onion Paste | Medium sized, finely sliced |
3 | Tomatoes | Sliced |
1/4 | Turmeric Powder | Teaspoons |
2 | Chili Powder | Teaspoons |
Method
Heat the oil in a large non-stick frying pan and sauté the green chilies, ginger and curry leaves for 2 to 3 minutes. Add the onions and fry until half cooked.
Add the tomatoes, turmeric, chili powder and a little salt. Cook for 5 minutes or until thick. Add the whole eggs to the sauce and mix gently until they are covered with the mixture. Sprinkle a little Garam Masala and mix well, remove from the heat and serve hot with rice or chapattis.
